I had a craving for comfort food like stew or soup although I wanted it to be in the reasonably healthy range too.
I saw a recipe for Crock-Pot taco soup and that really sounded good. I looked over the ingredients and made some quick tweaks. I’m not into spicy food; in fact I can be a real wimp in the heat department, LOL. Used a very small Crock- Pot (1.5 quart). It was delightful comfort food for me and it was reasonably healthy. There was enough for four servings too.
I love it when thing turns out great! It’s easy, reasonably healthy comfort food and I’d make it again. I even got a complement or two.
